Plant description

A species of evergreen tree belonging to the family of fabaceae. Occurs wild and is cultivated in the Mediterranean. Pods are called St. John's bread. Formerly, the carob seeds, due to the uniform size and solid mass (about 200 mg), served as a precise unit of mass (used today to describe this unit, the word karat, derives from the Greek word keration, meaning carob.

     
 

Properties

- fruits (pods) contain up to 50% of sugars, until the spread of sugar cane and sugar beets were the main source of sugar for the inhabitants of the region

- the taste resembles sweetened cocoa, which is why they are used as a substitute, mainly due to the very low fat content, hypoallergenicity and lack of caffeine

- fruits and toppings are turned into flour and give a dark color
